Chef de Partie (ប្រធានក្រុមចុងភៅ)

Summary of Position

Thalias is a leading company in the Cambodian hospitality industry employing over 400 staff. Thalias comprises three fine-dining restaurants - Topaz; Malis Phnom Penh, Malis Siem Reap, Arunreas– a luxury hotel, and Khéma, a dine-in and takeout gourmet shop.

Thalias is seeking a Chef de PartiesThe Chef de Parties is responsible to supervise the assigned station /section of kitchen in order to prepare a consistent, high quality food and ensure courteous, professional, efficient and flexible service.

Main Duties and Responsibilities

  • Ensure kitchen areas, utensil and kitchen equipment are clean, tidy and hygienic
  • Check all mise-en-place in term of quality and quantity, report to the immediate supervisor in case of spoilage, and place an order when required
  • Manage commis chef to prepare mise-en-place according to menus or event order, and store correctly in the right place
  • Maintain proper rotation of product in chillers and freezers to minimize wastage/spoilage
  • Prepare and cook fresh & dry vegetables, some hot starter, some quiches, and souffles, pasta, consommé, soup and stock according to designated recipes, quality and presentation standards
  • Ensure proper portion, arrangement, and food garnish before serving guests
  • Contribute to controlling costs and improving departmental profit margins or achieving targets
  • Ensure proper portion, arrangement, and food garnish
  • Comply with security, fire regulations and all health and safety and food safety regulation
  • Report maintenance, hygiene and hazard issues to immediate supervisor
  • Ensure uniform and personal appearance are clean and professional
  • Assist Sous Chef/Head Chef in supervising commis chef and providing them with the on-the-job training
  • Attend meeting and training sessions where required
  • Contribute to energy and environment saving
  • Perform other duties as assigned

  • High School Diploma and
  • Certificate IV in food production/culinary discipline from recognized vocational school of tourism

Experience

  • Minimum 2 year experience of a similar position, preferably with a fine-dining restaurant or hotel with good standards

Personal Qualities and Skills

  • Knowledge of all vegetables, fish, mash potatoes, stock ( pork stock, fish stock, beef stock, brown stock, espanhol stock, thicken stock), all cooking ways of vegetables, eggs,  and rice
  • Knowledge of HACCP hygiene standard
  • Good interpersonal, organizational and supervisory skills
  • Ability to work well with other staff members as part of the team
  • Pleasant, dynamic, and positive attitude
  • A passion to learn and a drive to succeed in a culinary career
  • Ability to work well under pressure in a fast paced environment
  • Able to work on a rotating shift basis, weekends and public holidays
  • Commitment to energy and environment saving

Language and Computer Skill

  • Able to read, write and speak English at intermediate level. Knowledge of other languages is an advantage
