Food & Beverage Manager

Summary of Position

The Royal Sands is a new all-villa resort comprised of 67 units and located on the untouched island of Koh Rong. Scheduled to open Mid 2017, the property boasts a wide range of facilities and services for guests to enjoy from this intimate island destination. We are looking for a FOOD and BEVERAGE MANAGER. The Food and Beverage Manager will in charge of directs and organizes the activities of the Food & Beverage departments to maintain the high standards of food and beverage quality, service, and marketing to maximize profits through outstanding customer service. Plans and directs the functions of administration and planning of the Food & Beverage department to meet the daily needs of the operation. Implements effective controls of food, beverage and labor costs. Ensures compliance with health, safety, sanitation and alcohol awareness standards. Helps ensure high standards of food and beverage quality, service, and marketing to maximize profits and ensure outstanding customer service. Interviews, trains, supervises, counsels, schedules and evaluates staff.

Main Duties and Responsibilities

  • Responsible for maintaining a consistently smooth running operation
  • Monitor and critique food quality and service levels by staying focused on floor and guest services
  • Hiring, and training of all staff
  • Forecasting and scheduling of staff according to occupancy levels
  • Daily tracking of payroll and revenue
  • Coaching and counseling staff, as well as holding monthly meetings for staff
  • Ensure physical atmosphere and cleanliness of restaurant, including inspecting tabletops, and side stations
  • Monitoring of all current inventories and assist in end of the month inventories
  • Responsible for ordering of new product and work closely with Purchasing
  • Attending department head, conference review, food and beverage and pre-con meetings as required
  • Responsible for timely performance evaluations of staff
  • Maintaining profitability of restaurant through forecasting and staffing
  • Communicate with Director of Food and Beverage, on all upcoming events, promotions, new products, etc
  • Handling of guest complaints in a professional and efficient manner
  • Providing a pleasant and efficient atmosphere for staff and guests

Min 3-5 years experience hotel Food and Beverage in a similar capacity

Minimum Educational Level Required

Associate Degree

Languages Required

Good command of English and other language is a plus

Other Requirements

  • High School or equivalent in any related field
  • Must be good at Effective Communication Skill, Teamwork and Customer Focus    
  • Proficiency in Computer literature
  • Min 5 years experience hotel Food and Beverage
  • Good command of English and other language is a plus
  • Can work on Island
